Yield: 20 (small) pancakes
Ingredients
1.5 cups of whole wheat flour (other healthy additions: sesame seeds and walnuts)
1.5 cups of “milk” (or water)
1 teaspoon of baking powder
1-2 ripe bananas
3/4 cup of fruit (e.g. raisins, frozen blueberries, apple slices, pear slices, peach slices, etc.)
oil as needed for frying
Instructions
Peel then slice bananas into discs (little hands can help with this task).
In a medium-sized bowl, mix the flour & baking powder.
Add “milk” to the bowl & mix. Add more liquid if the batter is too thick.
Add bananas & fruit to the batter.
Heat & grease a skillet.
Fry pancakes on each side until golden brown.
Serve and top with more fruit. Enjoy!
