All you truly need is frozen bananas & a blender (or food processor).
The goal:
Key ingredients
Frozen slices of a banana; this is the only essential ingredient but you’ll need to freeze it in advance.
¼ cup liquid; we use oat or hemp “milk” but nearly anything will do - even cold water! You don’t want to add too much or your ice-cream won’t be viscous enough.
A couple of handfuls of nuts; cashews are ideal but peanuts work fine too - you can use pistachios if you’re feeling decadent! [If you have a family member who is allergic to nuts then you can try sunflower seeds instead but they take longer to blend.]
Optional ingredients
A handful of small seedless fruit (e.g. cherries, raspberries, blueberries); both frozen & fresh will do.
2-3 tablespoons of cocoa powder (if you like chocolate).
A handful of finely shredded coconut - goes well with chocolate.
A handful of shredded whole wheat; this gives your ice-cream the texture of a “flurry”.
A pinch of chilli powder (if you want some kick); you might not want this if your kids are very sensitive to spicy food, although it’s a good trick if you want to eat it all yourself.
A pinch of chat masala; this enhances the flavour by adding salt but if you don’t have it then you could also just use salt instead.
A pinch of ground cardamom; we grind it ourselves using a mortar & pestle but you can definitely use the pre-ground powder easily found at a grocery store.
Instructions
Add the frozen banana to the blender, followed by the nuts.
Top this with any optional ingredients you like.
Pour the liquid over the top.
Blend the mixture until it is smooth - little hands can help with this part. No matter how tempting, do not lick the blades.
Serve in cones (or bowls).
This sounds like a nutritious version of ice cream! :)
Wow!!
