Inspired by the Trader Joe's recipe on its flax meal package.
Yield: About 10-15 balls.
Time: About 10-15 minutes
Ingredients
1 cup rolled oats
1/2 cup raisins or chocolate chips e.g. a 100% chocolate one or Choc Zero chocolate chips (we don’t receive any commission; we love Choc Zero because their products don’t contain sugar alcohols).
1/2 cup ground flax seed
1/2 cup crunchy almond butter or peanut butter
1/2 teaspoon vanilla extract
1/3 cup homemade date paste (made with about 6-7 dried and pitted Deglet dates or 4 dried and pitted Medjool dates, and about 1/3 cup water)
Instructions
Make the date paste by placing 6-8 deglet dates (fewer if you want it less sweet. Use about 4 if you are using medjool dates, which are larger) with about 1/3 cup water in a microwave safe bowl.
Heat for about 2 minutes until soft and mashable with a fork. Set aside to cool.
Forms balls.
Eat!
