Yield: 4 popsicle moulds - if you don’t have moulds, use an ice tray with toothpicks as popsicle sticks.
Time: 10 minute prep + ~5 hours of freezing time
Ingredients
Half a small seedless watermelon, skin removed and coarsely chopped
Various fruit e.g. blueberries, strawberries, peaches, etc. (optional)
If you are adding additional fruit and have a bit of time, cook them on the stove with a dash of water until they are soft and then add this to your moulds for a concentrated strawberry flavour. [Our friend Derek gave us this idea. He also strains the seeds out like a pro.]
Instructions
Place watermelon chunks in a food processor.
Fill your popsicle moulds (or ice tray) with the watermelon juice.
Add optional fruit pieces.
Place your popsicle sticks (or toothpicks) in the moulds.
Leave them in the freezer until frozen.
