Whole grain banana & berry waffles
Yield: 4 small waffle wedges (if you have a waffle maker that makes 4 waffles at a time).
Time: 5 minute prep + ~15 minutes in the waffle maker
Ingredients
3/4 cup whole wheat flour
1/4 cup ground flax seed
1 teaspoon baking powder
a dash of cinnamon
1/4 cup oil
3/4 water or unsweetened vegan milk of your choice
1 banana, sliced into discs.
1/2 to 3/4 cup of {blue,rasp}berries, fresh or frozen. Adding close to 3/4 cups of berries is delicious but may result in some berry juice seeping out of the waffle maker and the waffles splitting in half when you open the maker. [It’s still salvageable.]
Instructions
Heat up your waffle maker according to its instructions.
Mix flour, flax, baking powder and cinnamon in a medium-sized bowl.
Pour oil and vegan milk/water into the bowl with the flour mixture.
Mix, but not thoroughly.
Add bananas and berries and mix some more until there are no dry lumps.
Grease your waffle maker if it’s not non-stick.
Place mixture into the center of the waffle maker and spread out with a spoon.
Cook according to your waffle maker’s instructions.
Gently remove waffles when done.
